My Favourite Cocktails

Updated: Mar 31, 2023

I am not normally a cocktail person. I don't mind a slice of lemon in my G&T or even a shamrock on my Guinness, but every so often I am amazed at the genius and flavour that Libby can produce in her cocktails. Her classic training as a cook is obviously the mechanism that allows her to create and execute 129 genius recipes. Most of the classics are there but you will be amazed by some of the unique creations that Libby has dreamt up. Here are some of my favourites:

Pink Gin Spritz

Perfect for any hot sunny day, and there are plenty of them between May and September in Skiathos. The spritz glass is prepared with ice and frozen fruits of the forest . Gordons Pink Gin is then added and topped up with Sprite. A generous measure of chilled Prosecco is added to make this the perfect thirst quencher.

Paradise Bounty

Do you want to taste a little of the Caribbean or just satisfy your chocolate craving. Our Paradise Bounty Cocktail delivers in every sense. Lovingly created using Smirnoff Vodka, Baileys, Coconut Syrup, Milk & Cream and topped with half a Bounty Bar.

Espresso Martini

One of my favourite after dinner drinks. Combining Smirnoff Vodka, Kahlua & a double shot fresh Espresso. The perfect pick me up after an exhausting day lying on the beach.

Pink Pussycat

This is a wonderful combination of fresh fruit flavours, comprising of Gordons Gin, Grapefruit Juice, Pineapple Juice & Grenadine. The pink colour obviously comes from the grenadine and is the only reference I can think of for the origin of the name. If you are a cat person then this could be the drink for you. Googling the name is not recommended for the squeamish.

Mango & Passion Fruit Daiquiri

More like a desert than a drink, comprising of Bacardi, Mango, Passion Fruit, Passion Fruit Syrup and Lime Juice. The amazing combination of Mango & Passion Fruit leaves you smacking your lips after tasting this tipsy blend of amazing ingredients.

Mocktails

We have some fresh fruity cocktails for your enjoyment without any alcohol. Each of these Mocktails delivers plenty of taste and refreshment to be enjoyed without the booze.

Rum Punch

This is probably my favourite cocktail combination. This freshly made Caribbean concoction transports you to Barbados, where the oldest rum distillery in the world still produces probably the best rum in the world.

Our freshly made Rum Punch uses only the best ingredients and is topped with freshly ground nutmeg that warns your senses before you even have a chance to taste the icy cold combination that awaits you.
